Does a warm drink taste sweeter than a cold one with the same amount of sugar? You prepare six sugar-water mixtures at different concentrations. Then you serve them to 40 participants at four temperatures: 10, 20, 30, and 40 degrees Celsius. Each person compares pairs of samples and picks the sweeter one. You record their choices on a simple form. The results show that warmer temperatures make people perceive more sweetness, even when the sugar amount stays the same.

Hypothesis

The hypothesis is that as the temperature of the sweetened water is increased, our ability to distinguish between a sweeter and a less sweet liquid is improved.

Method & Materials

You will need to gather 20 male and 20 female participants, 6 jugs, 240 plastic spoons, 40 plastic cups, 1 wooden spatula, 1 packet of sugar, 6 liters of cold drinking water, a thermometer, an oven, a refrigerator, and a small weighing machine. You will then add sugar to the water in the jugs according to the given ratio, put the jugs in the refrigerator, take out the jugs and have the participants taste the samples, and fill in a questionnaire.

Results

The results show that increasing the temperature of the water improves the perception of taste in the participants. This means that if we are able to perceive sweetness better with our tongues when food is warmer, we can then cut down our sugar intake by switching from cold to hot drinks.
